"Vegetarian Options" and "Pure Vegetarian" Are Not the Same Thing

If strict vegetarian food matters to you, three questions will tell you almost everything. Is the kitchen fully vegetarian, or are veg and non-veg cooked side by side? Are fried items cooked in their own oil? And if they advertise Jain food, is it designed that way from the recipe, or is it a regular dish with the onion left out? Why South Indian Food Is a Natural Home for Pure Veg

South Indian cooking makes pure vegetarian eating easy rather than limiting. The foundations of the cuisine are rice, lentils, and vegetables: dosa and idli from fermented rice and dal, sambar built on toor dal and tamarind, chutneys ground fresh from coconut and herbs. Nothing about it is a substitute for meat, because none of it was ever built around meat. There is a reason the most beloved Jain-friendly food traditions lean South Indian.
